Then we get globally inspired at the Gastronomo Vagabundo truck in Toronto, Canada, where world cuisine is fused into dishes that are out of this world such as a Pickled Lamb Tongue coated with Egyptian dukkah and a tempura fish taco with Trinidadian hot sauce. Next it's a trip to Austin, Texas, for some classic fish and chips at the Bits & Druthers truck with fish coated in the crunchiest beer batter around. Finally we cap it all off with a trip to Washington, D.C., to meet and eat with The Fojol Brothers, a traveling carnival of Ethiopian-inspired cuisine such as beef berbere and collard greens with injera bread.
