Paul also returns to his old church and bakes millionaire's shortbread with salted caramel for the congregation. And he shares his baker dad's recipe for floury baps - still the best bread he's ever tasted.

Pork Pie, Donuts & Danish Pastries

On the menu this time, fresh fruit donuts and British-raised pork pie. Paul returns home to Merseyside to meet up with his oldest and closest friends. He also joins the nightshift at the prestigious Chester Grosvenor - the hotel where he got his big break - and bakes exquisite seasonal Danish pastries.

Paul shares his favourite Mediterranean recipes on a trip to Cyprus, where he spent six years living and working. In Paphos, he's reunited with a Cypriot baker friend and together they prepare a classic ham and cheese croissant. He also makes a baklava with another old friend and a tray of celebratory spanikopita for a sunset gathering. Later, Paul recalls his first appearance on TV and bakes a Cypriot village bread using a traditional village oven.
